Basic Profile
Irving Puffer has farmed and harvested shellfish in Wellfleet for about 40 years, and has held his lease on the Mayo Beach tidal flats for more than 30. The flats lie within one of the oldest oyster beds in Massachusetts.1
Catching Their Own Seed
The Puffers grow most of their oysters the French way, in mesh bags on racks, and plant some on the bottom to grow larger. They also collect wild spat: their collectors can take in upwards of two million young oysters in a season.1 The harbor's long record is told in the Wellfleet profile.

What Makes Puffer's Petites Unique
Wellfleet is a name shared by many growers. This is one family's oyster from one grant, sold small on purpose, and seeded in part with spat caught in the same harbor.1
Should You Add Lemon?
It is salty enough that a few drops will do. Taste one plain first.
Pairing Guide
Lean and salty for a salty harbor.
Its stony side meets the savory finish.
